I woke up this morning to yet another glorious summer day and in the mood for baking! I wanted to bake a cake that encompassed summer and a recipe for a honey cake I found a year or so ago immediately sprung to mind.
And this got me thinking about honey, I've always got a jar of pure local honey in the cupboard but only tend to use this over fruit and yoghurt at breakfast or in a hot toddy when plagued with colds and flu. It never enters my head to be adventurous and cook with it – until now!
There is a sweetness and richness that can only be found in honey and it adds flavour and moisture to cakes, breads, biscuits and makes wonderful sauces and dressings.
